Creamy, smooth and very, very chocolatey!
Prep Time: 20 minutes plus chilling – Makes 4 servings
| 1 3/4 cups | skim milk, divided |
| 1 | egg |
| 1/2 cup | granulated sugar |
| 1/4 cup | unsweetened cocoa powder, sifted |
| 1 1/2 tbsp | cornstarch |
| 1/8 tsp | salt |
| 1 tbsp | coffee liqueur |
| 2 tsp | vanilla |
1. In heavy (or nonstick) saucepan (or skillet), heat 1 cup milk, over medium heat until bubbles form along sides of pan; remove from heat.
2. In large bowl, whisk together remaining 3/4 cup milk, egg, sugar, cocoa, cornstarch and salt. Slowly whisk in 1/2 cup of hot milk. Pour this mixture back into the saucepan; return saucepan to medium heat. Cook, stirring constantly, until mixture bubbles and thickens (approx. 8-10 minutes); remove from heat. Stir in liqueur and vanilla. Place a sheet of plastic wrap directly on surface of pudding (will prevent a skin from forming). Cool completely.
3. Remove plastic wrap from cooled pudding; stir pudding until smooth. Spoon into individual dishes. Chill. Garnish with sliced bananas and/or strawberries/raspberries if desired.
